Touted by many of our customers as “the best baguette I’ve ever had”- our baguettes are hand rolled and baked on hearth stone decks attended by our watchful bakers. The end result is a golden baguette with a crisp outer crust and tender interior. A small amount of sour starter in the dough rounds out the flavor creating a taste that is one of a kind.

Standard Baguette

Our Standard Baguette begins with the same dough and hand rolling as our Hearth Baked Baguette, they are then baked on screens resulting in a baguette that boasts the same great flavor but with a softer crust.

Ficelle

Translated from French, ficelle means “string”- we take our Hearth Baked Baguette dough and artfully hand roll it until it is about one inch in diameter. They are then baked directly on the hearth stone decks, resulting in a thin baguette with a crispy, well developed crust and tender interior.

Hearth Baked Batard

Created with the same lean dough used in our Hearth Baked Baguettes, our Hearth Baked Batards are cut and formed in a long oval shape, left to proof and then baked directly on on hearth stone decks. The baked batards have a well developed crust and tender chewy interior.

These rustic boules are created with the same dough as our Sour Dough Pullman. Baked directly on our hearth stone deck, the resulting loaves have thicker crust than the pullman loaves, but the same tender interior and super sour flavor.

Italian

Similar to our Hearth Baked Batard, our Italian loaf is a little larger an wider in shape. The dough also incorporates a little olive oil, lending a little more flavor and elasticity to the interior of the finished loaves. The crust is rustic and and indicative of Old World style breads. Mangia!

Developed by our innovative staff, our American Grain Boule is as ingenious as the land that inspired it. This multi-grain bread spotlights ingredients indigenous to the Americas, such as cornmeal, wild rice, quinoa and pecans. The batards are baked directly on our hearth stone decks, resulting in a flavorful, crusty loaf that is unique to our bakery and well loved by our customers.
