Pronounced “pool-yee-AY-zee”, this style of roll hails from the bread basket of Italy, Puglia. Our version incorporates unbleached wheat and whole wheat flours and are baked directly on our hearth stone decks for a well-developed, crunchy crust. Slightly heavier than our Ciabatta, these rolls have a similar, large hole interior making them ideal for sandwiches or just ripping apart and dipping in extra virgin olive oil.

Hoagie Rolls (6” or 10”)
Our rustic, hand-rolled hoagie rolls have a crusty exterior and dense, chewy interior. The addition of a little sour starter to our dough results in roll that offers much more flavor than other hoagie rolls. Available in two sizes, these are perfect for anything from sausage sandwiches to cheesesteaks to fully loaded Italian hoagies.

Yards ESA Multigrain Round
We have partnered with Yards Brewery to create this amazing multigrain bread. Our dough is made with a 9 grain blend consisting of durum wheat, flax seeds, hard wheat, soft wheat, triticale, rye, oats, pearled barley and spelt. The dough also receives an incredible yeasty flavor from the addition of Yards Extra Strong Ale. The result is an extremely versatile, lightly crusty roll with a slightly yeasty beer flavor that is balanced by the nuttiness of the whole grains- perfect for any sandwich.
Ingredients: King Arthur Special Spring Patent Bread Flour, whole wheat flour, sour starter, 9-grain blend, Yards ESA, malt syrup, water, yeast, and fine sea salt
Translated from Italian, Ciabatta means “slipper”- a reference to the the low, flat shape of these rolls. Our Ciabatta has a medium crust, slighly lighter than our Pugliese Rolls with a similar large hole interior. A little sour starter is added along with yeast yielding a subtle tang that compliments all sorts of sandwich ingredients. Filled and pressed they make for an incredible panino.
